Bacon Wrapped Spiced Sweet Potatoes

3 medium sized sweet potatoes

6 to 8 sliced of bacon, cut in half

1 T Chili Powder

1 T Dried Parsley

Salt and Pepper to taste

2 T Butter, melted

 

Preheat oven to 375 degrees. Peel sweet potatoes and cut into rectangular finger sized pieces. Toss potatoes with the butter and spices. Wrap each piece of sweet potato with bacon and put on baking sheet with the end of the bacon on the bottom. Bake for 10 minutes, then turn over and bake for 10 more minutes. Insert toothpick into sweet potato to ensure tenderness. Allow to cool slightly.
