She Crab Soup

 

 

  • 1 stick butter, unsalted
  • 1/3 cup flour
  • 1/4 cup onion, diced
  • 3 cups fish stock
  • 2 cups cream
  • 1 cup milk
  • 1/4 cup sherry
  • 1 pound crab meat
  • 1 tsp salt
  • 1 tsp hot sauce

 

Directions

Melt butter in sauce pan and saute onions for 5 minutes. Add flour and cook for 5 minutes. Add the next 4 ingredients and bring to a simmer while constantly stirring to  avoid any lumps and scorching. Add crab meat, salt, and hot sauce and incorporate.
