Deviled Eggs with Aged Provolone, Bacon, and Jalapeno


  • 6 large eggs, hard boiled and peeled
  • 1/4 cup mayonnaise
  • 2 T finely chopped pickled jalapenos (more or less for your taste)
  • 1 T Dijon mustard
  • 3 strips cooked bacon (bacon grease reserved)
  • Sliced aged provolone (substitute favorite cheese if preferred)


Halve 6 eggs lengthwise. Remove yolks and place in a small bowl.

Mash yolks with a fork and stir in mayonnaise, jalapeno, and mustard. Add salt and pepper, to taste.

Mound egg whites  with yolk mixture. Top with a small piece of bacon and a Provolone cheese.

Melt under broiler until cheese is golden brown.

Garnish with chopped parsley and drizzle bacon grease on plate for added goodness.
