Seared Scallop on Parmesan Crisp

Make Parmesan crisps ahead of time and allow to cool to room temperature.


Preheat oven to 350 degrees

Line a baking sheet with either parchment paper or silicone baking sheet


1 cup shredded fresh Parmesan cheese

Put 1/8 cup of cheese divided into eight piles and slightly press down

Bake for 5 minutes or until browned around the edges

Allow to cool to room temperate before removing from pan


8  U15 scallops, patted dry

Oil for searing

Salt and Pepper


Heat non stick pan on medium high

Add enough oil to coat the bottom of the pan

Season scallops on both sides with salt and pepper

Sear scallops on each side approximately 3 minutes

Allow to cool slightly and place on Parmesan crisp

Garnish with parsley sprig, chive, or sliced green onion
